There are many regional interpretations of the kimoto process. In Akita it is much different than what you can find further south in the Kansai region. Named Akita-ryu kimoto (Akita style kimoto), it’s got a more elegant profile. Kodama Jōzō has contributed to the development of that style by inventing a technique making use of electric drills in lieu of the traditional wooden oars (kai) for the yama-oroshi step. The resulting sake is more refined, without lacking character. This kimoto junmai from Taiheizan brand is an excellent introduction to this style, which has stood the test of time and won’t break the bank!

There is no real official paddy classification system outside of Hyōgo Prefecture. However, if there was one in Okayama, Akaiwa would certainly be of Cru level. It’s with this premium omachi that the 1898 cuvée is made. Based on a 1898 recipe, tōji Mitobe-san uses the kimoto method to add roundness and personality to this sake. The dry, crisp finish is due to the harder brewing water.

One of the first sakes to go through a malolactic fermentation, this junmai has a similar although different profile than the 1898. The lactic notes perceived on the finish are not due to the kimoto process but rather because of malo. It is also more aromatic than the 1898 as a result of the rice used. Dewasansan is THE sake rice of Yamagata. Named after the 3 sacred mountains of Dewa, revered for centuries. Even though the polishing ratio is 60%, it is classified as junmai rather than ginjō as it shows more cereal flavours closely associated with a junmai.

Anchored in the shizenshu philosophy, this sake aims to be as “natural" as possible. It is composed of a blend of 5 varieties of organic rice (shizenmai) and without lactic acid input. The shiro-kōji brings more acidity which cleans the palate and makes Odayaka even more crushable and versatile.

Niida-san is somewhat of a poster child for the shizenshu (“natural sake”) movement. So much that he has named his flagship brand after it. A generous and structured sake, notably due to the fact that it wasn’t diluted following pressing (genshu).

The traditional kimoto process was perfected during the Edo Period and makes use of the ambient lactic bacteria to protect the shubo (starter) from the undesirable microorganisms. Omachi is a capricious sake rice strain. With only 500 hectares planted in the Okayama Prefecture, it has been nicknamed “maboroshi no sakamai” (phantom sake rice) due to its scarcity. Moreover, the fact that it dissolves quickly makes it a very hard variety to brew. However, in capable hands, it produces some of the most sought-after sakes. The talented tōji Onishi Tadayoshi, creator of the coveted brand Jikon, has mastered Omachi to create a true jewel of a sake. This cuvée is in our humble opinion the pearl of the Jikon range, striking balance between aromatic intensity and depth.

The “entry” bottling (does such a thing exist with Jikon?) made with Hattan-Nishiki (Hiroshima) for main rice and Yamada-Nishiki (Hyōgo) for kōji rice. Riceyer than most Jikon bottles, you still perceive the influence of the No. 9 yeast, one of the first ginjō yeast. A sake that can righteously be paired with tomato sauce in all of its variations.

Even though he is from Mie Prefecture, tōji Oni-san has somewhat of a soft spot for Hiroshima Prefecture, having worked there previously. It does not come as a surprise that he brews a ginjō with a rice variety from Hiroshima. Oni-san’s interpretation of Senbon-Nishiki is super aromatic, even recalling candied strawberry, but with an elegant finish.

A few years ago, Masayuki Imanishi had to suddenly take over the family brewery following the unexpected death of his father. This junmai daiginjō is part of the “Roman Series” (roman shirīzu), which is on the higher end of the Mimurosugi offering. Fresh, floral and delicate, it is a must try for the ginjō aficionado.

Now kuramoto-tōji (president and master brewer) of Nagayama Honke Shuzōjō in Yamaguchi, he transposed this passion to his own terroir. For him, there wasn’t such a big gap between the calcareous soils of Burgundy and the limestone-rich water of the Akiyoshidai plateau. This is the water he uses to brew this refined and vibrant tokubetsu junmai, made with Yamada-Nishiki and Hattan-Nishiki no.1.

Even though Yamaguchi Shuzōjō has produced excellent sakes in the Fukuoka Prefecture on the island of Kyūshū for nearly 200 years, this umeshu has a shōchū (japanese spirit) base. This is a testament to the quality of the shōchū hailing from Kyūshū. As a matter of fact, only Fukuoka and Saga prefectures produce more sake than shōchū on the island. Umeshu is an alcohol in which ume, a stone fruit halfway between an apricot and a plum, has macerated in sake or spirit. This versatile beverage can be enjoyed on the rocks or in a cocktail at the beginning of a meal, or slightly chilled as a digestif. With its sweet and sour profile, the Uguisutomari is delicious on all occasions.

Fukurokuju Shuzō is part of the new generation of breweries in Akita Prefecture focusing on quality. A member of the prestigious NEXT FIVE association, alongside world renowned breweries such as Aramasa Shuzō and Yamamoto Shuzō, Fukurokuju Shuzō makes low intervention sakes following the Sannai guild principles. With the legendary Takahashi-Tōji as one of its leading figures, much effort is made not to “disturb” the moromi (main mash) while brewing. For example, the moromi is not stirred, the yeast providing enough convection movement. This tokubetsu junmai is made with two local rice varieties Akita Sake Komachi for kake-mai (main rice) and Gin No Sei for kōji-mai (kōji rice). Comes in isshobin (1800 mL) to create the illusion you are in a cool sake bar in Ebisu.
